Gluten Free Muffins

This makes 12 light and fluffy GF muffins that you can serve to anyone. If you don’t tell them, they won’t even know its gluten free, and has some added Omega-3 essential fatty acids, aka good fats, and fiber. Just remember to make sure your ingredients are fresh and haven’t been sitting in your cupboard for years, and if you can use freshly ground flax seed to get the full benefit of the flax meal. ½ cup brown rice flour

½ cup sweet rice flour (or white rice flour)

¼ cup Tapioca starch

¼ cup Potato starch

¼ cup Flax meal

½ cup cane sugar

2 tsp baking powder

1 tsp baking soda

1 tsp xanthan gum

¼ tsp salt

1/3 cup coconut oil (or canola oil)

2 eggs

1 plain yogurt

1 apple cut into small pieces

 

Options:

Make with Berries, peaches, chocolate chips or nuts instead of apples,

Use sour cream, vanilla yogurt, apple sauce or 2 mashed bananas with 2 Tbsp of almond milk instead of plain yogurt

 

Mix all dry ingredients in one bowl (First 10 ingredients), then mix wet ingredients in another bowl (oil, eggs, yogurt or other option to the wet ingredient), then mix dry ingredients into the wet ingredients. Fold in apples (or other option). Put into muffin tins, sprinkle cinnamon on top (optional). Bake at 350° for about 25min or until golden brown and a fork can come out clean. Cool for 5 min on rack, then enjoy.
